THE GOURMAND STUDENT

Students have traditionally gained something of a reputation for their lack of culinary prowess. Stories of burnt fish finger sandwiches, Pot Noodles and boil-in-the-bag suppers are as bountiful as the kebabs eaten on a Friday night.

However there are a growing number of young gourmands who are realising that taking an interest in food is not only good for the taste buds, but can help improve sustainability, keep individuals healthy – and improve their love lives!

The Sprint Bus stops at the following bus stops on Loughborough University campus:

1. Outside the Student Union

2. Outside the Mechanical Engineering building

3. Outside the Pilkington Library

Buses run every 10 minutes Monday to Friday, but less frequently on the weekend.  It costs £1.20 to get into town and £1.50 to get to the train station.  Return tickets are not available.

It was 100% intentional that we chose Dave to do the cooking for our band. We’ve eaten his food a load of times and like we’ve never been disappointed. I guess he had the advantage of experience because he has done some work in kitchens when he’s done ski season and stuff but it’d have been stupid of us to not make the most of that!

I am a pretty good cook myself…I think. If I had cooked the meal I would have done something much more simple probably. Something like a casserole or a stew because I like cooking things like that when you can just throw everything in and let it cook. It dead cheap, really simple and ideal for the winter because it warms you up! Having said that we were meant to be making something that represented the music we play, which I don’t think a stew does!

The Inside Scoop with Jess & Her Mum

To say that I was nervous cooking against my Mum is a bit of an understatement.  My mum’s lasagnes are the best lasagnes I’ve ever tasted and for me to make a better one than hers seemed impossible…especially when I had no idea how to make a lasagne!

Studentcooking.tv must have known how difficult this challenge for me was as they organised some much needed lasagne training with me and Leeds uni chef Simon Wood.  I spent a week with Simon in the uni kitchens learning how to make a proper lasagne from scratch-and learned everything from making a roux to getting the tomato sauce just right.

The actual fight…I mean cook off…was great!  By the end of the week I was dead confident to cook against my Mum, and after a little slip up in getting the lasagne into the dish, it all went really well.

I’d like to tell you who won during the day, but I guess you’ll just have to watch Mothercooker pt 2 video to find out!

Jess’ Mum

When Jess phoned me and said that she wanted to make a better lasagne than me, I didn’t know what to say.  Jess has never been into cooking much and I don’t think she even knows how to make a lasagne.

I wasn’t really worried even though Jess said that she’d been having training from Simon Wood.  I’ve been making lasagnes for years and having a big family to feed, am comfortable making them at short notice.  As for the final result, well you’ll just have to see who wins!

Chili Con Carne: To Hot To Handle?….Our Guide

If you would like to make a successful chilli con carne rather than a disaster here are a few tips to make it extra tasty and that innit:

1.    Cook it for a long time – the longer you cook it the more the flavour of the chillies get into the food. Makes it more spicy and I think more tasty.
2.    BOOZE – don’t just add any booze indiscriminately, I’m talking about wine. It doesn’t have to be an expensive wine but adding it does give a nice flavour. Add it early on and cook some of it off before you add you tomatoes.
3.    Adding Worchester sauce makes it taste amazing. You may call me crazy but I think you should try it. Add it in little bits to taste.
4.    Add some beef stock, just one Oxo cube will make it taste like an actually cow. Delicious.
5.    Always make too much, re-heating the next day you will find it tastes even better than the first time! Do make sure it’s piping hot all the way through though, stick a fork in the middle. If the end of the fork is hot when you pull it out it should be okay.

Vegans Ahoy!

Veganism is a lifestyle choice by which a person decides to live without the use of ANY animal products. Like vegetarians, vegans obviously don’t eat meat but in addition to that they also don’t consume anything else that has come from an animal such as eggs, cheese or milk. It doesn’t just stop at food products however as there are lots of clothing items that a true vegan can’t wear because the way it’s made. Most commonly shoes and trainers are an issue due to them often been bound using glue made from horses hoofs.

Every individual has different reasonings for why they became vegan with many having issue with the morals surrounding animal rights. There is however a strong environmental argument in favour of people eating vegan. This argument is based around several points one of which being that the energy and supplies used to rear livestock heavily outweighs the resources it would take to simple grow the food we feed to the animals to feed us…if that makes sense?
Basically we grow corn to feed animals – the animals get fat – we transport them – kill them – transport them – eat them. The more environmentally and vegan solution is for us to simply eat the corn.

The other environmental issues is methane. Cow’s produce lots and lots of CO2 that does have a huge effect on climate change. And yes – we can’t stop cow’s farting however if there was less demand for livestock there would be less cow’s and therefore less smelly CO2 ridden cow farts.
A study in 2006 by the University of Chicago showed that on average an individual changing from a regular diet to that of a vegan would reduce their CO2 emission by 1, 485kg per year. Which is quite a lot.

Veganism does however have it’s drawbacks. Through eating plant products exclusively vegans do miss out on certain important nutrients. Studies show that vegan diets are  lacking in Vitamin B12, Vitamin D, calcium and iodine, all of which is severe can cause serious health problems. A distinct lack in vitamin B12 can result in anemia and neurodegenerative disease although it is rare for a B12 deficiency to become clinical in most vegans.

There are plenty supplements around for vegans to take on these vitamins in other ways such as vitamin tablets and fortified foods such as soymilk fortified with calcium. It’s highly recommended that anyone wishing to lead a vegan lifestyle regularly take on supplements.

Veganism is a lifestyle choice that is growing and becoming more popular with supermarkets catering for the needs of a vegan diet more and even lots of vegan specific clothes retailers producing clothes without the use of any animal products.

From the front line with a loser.

United we stand divided we fall has become very prevalent in the light of mine and Steve’s performance in King of the Kitchen. I whole heartedly blame Steve for our miserable defeat – how hard could it have been to pick the right ingredients!

It’s true enough that it was the food I cooked that didn’t win however I have to say that I didn’t really have anything to work with. With no meat and some peanut butter I think it would be fair to say that the food didn’t even bear a slight resemblance to chilli con carne.

It was all a lot of fun though and that’s what it’s all about, I wouldn’t be saying that had there been a good prize however! In the end I think Patrick was simply choosing the lesser of two evils as Mark and Lauren’s chilli didn’t look great either. Very glad we did it though, loads of fun and something to remember!
