A Taste of Bahia – Brazil!

So, as you saw in the video, Marie and Vicki cooked up a delicious authentic Brazilian dish with chicken and prawns. Here’s the recipe so you can try it yourself!

Serves: 4
Ready in 45 mins

Ingredients:
• 500g raw King prawns
• 500g chicken breast, cubed
• 4 limes
• 4 heaped tsp garlic, crushed
• 400ml chicken stock
• 25g each of peanuts and cashew nuts, crushed
• 1 green bell pepper
• 2 cans coconut milk
• 25ml white rum
• Oil
• Fresh coriander
• A good handful of fresh ginger, sliced
• 500g basmati rice, cooked

Method:
1. Prepare your chicken by covering the cubes in the juice of 1 and a half limes with 2 tsp garlic for 20 mins.
2. Heat some oil in a pan and add the chicken – cook until it turns white, then remove and set aside.
3. Put some more oil in the pan and cook the bell pepper and ginger until soft, then add the chicken back to the pan and cover with 400ml chicken stock and simmer for 20 mins on a low heat.
4. Meanwhile soak the king prawns in the juice of 1 and a half limes with 2 tsp of crushed garlic for 20 mins.
5. In a separate pan cook the prawns over a high heat until they are cooked and the rum.
6. Add the prawns and the juice to the pan with the chicken, the pour in the coconut milk – simmer lightly for 5 mins and add your fresh herbs.
7. For the rice: add some oil to a hot pan, add the rice, lightly toast it, then cover with boiling water – simmer for 10-15 mins. When it’s ready, plate up! Spoon rice on the plate and pour your chicken sauce over!
