Swansea – Chilli Con Carne!

As you saw in the Swansea Two Point Four Students video Katie, Bethan and Devon cooked up a tasty, student-friendly Chilli Con Carne perfect for you and your housemates (or friends)! It’s easy, delicious and doesn’t cost a lot to make. Here’s the recipe so you can make it yourself and treat your mates – this recipe feeds 4 but can easily be doubled or halved!

CHILLI CON CARNE

Ingredients:
• Ground/minced beef 500g
• 1 Large onion, chopped
• 1 Large pepper, chopped
• 2-3 Cloves of Garlic, crushed
• 2 Tins of chopped tomatoes (2 x 400g)
• Squeeze of tomato puree
• 1 teaspoon of chilli powder or chopped fresh chilli (or to taste)
• 1 teaspoon of ground cumin
• 1 teaspoon of paprika
• 1 tin of drained kidney beans (400g)
• 1 small piece of DARK chocolate or sprinkle of cacao power (secret)
• 1 Glass Red Wine
• Rice to serve!

Method:
Use a large pan (probably the largest you have) with a nice lid!

1. Fry the onion in a hot pan with oil until nearly brown then add chopped garlic. Add all dried spices and seasoning and stir for a few minutes covering everything.
2. Add all the vegetables and stir for a few minutes then add the mince and stir until brown – drain any excess fat if desired.
3. Add the chopped tomatoes and reduce heat. Stir well and add tomato puree to thicken if needed, and the wine, then leave to simmer for about twenty minutes.
4. Add the tin of drained kidney beans and cook for a further 10 mins.
