CHICKEN & CHORIZO PAELLA
• 200g chicken breasts
• 1 chorizo sausage
• 1 large onion
• 3 garlic cloves
• 2 red peppers
• 3 red chillies
• Chicken stock
• Paella rice
1. Dice the chicken breasts and fry until evenly brown, then remove the chicken from the pan.
2. Cut the chorizo into discs roughly 3mm thick, fry until crisp then add the onions. Cook gently until the onions are soft, then add the garlic and fry for a couple of minutes.
3. Add the peppers, chillies and paprika, cook for 3 minutes.
4. Return the chicken to the pan and add the stock. Simmer gently for 20-25 minutes. Add the rice to the pan and cook for 30 minutes until most of the liquid has absorbed.
